Cheese seasoning grids: all the advantages for the dairy sector

Discover all the advantages of cheese seasoning grids in the dairy sector

Tuesday 02 April 2024

If you have a dairy or are involved in the artisanal production of cheese, you will know how essential the seasoning phase is to obtain the right flavor, texture and quality of the products. This process requires time and attention: cheese is left to rest in a controlled environment, until it develops a characteristic flavor and texture, and must be stored in optimal conditions to achieve exactly the desired result. Cheese seasoning grids play a key role in this process, offering a number of benefits that contribute to the production of high quality cheese and maintaining the hygiene standards required in the dairy industry.

In particular, the plastic grids designed and manufactured by IFT are specifically designed for the dairy sector and, thanks to their structure, they promote proper air circulation around the cheese. To better meet the needs of the dairies, IFT has recently introduced in its line of plastic equipment a new stackable perforated grid, adaptable to all types of cheese and the various stages of drying and maturing.

Let’s see in more detail all the features and advantages of cheese seasoning grids and their different applications in the dairy industry.

Cheese stackable grids: characteristics and applications

Cheese stackable grids are food storage equipment made of plastic materials suitable for contact with food and are characterized by a particular grilled structure that allows optimal air circulation, encouraging a uniform and controlled maturation of the forms. The use of polypropylene, or other plastics certified for contact with food, makes them resistant and hygienic, facilitating cleaning operations and preventing external contamination. Polypropylene, in particular, offers numerous advantages in terms of mechanical strength, durability and resistance to thermal variations.

Grids can be made of different sizes and shapes to suit the specific needs of cheese producers and can have various applications in dairy processes. First of all, they are used to support cheese during the maturing phase in cellars or specially equipped rooms. Thanks to their perforated structure, they allow an excellent aeration of cheese, avoiding the formation of unwanted mold. They can also be used in the different processes of processing soft cheese or in the early stages of maturing, providing a stable and uniform support for the performance of the various production processes.

All the advantages of cheese seasoning grids

Cheese seasoning grids offer a number of key benefits that help improve the dairy production process and the final quality of products. As we have seen, one of the main benefits of this equipment is to allow optimal ventilation of cheese. This promotes a uniform and healthy aging, ensuring a homogeneous distribution of flavors and organoleptic characteristics and avoiding the need for frequent turning over. In addition to this, grids can also provide other benefits, including:

  • easy turning of cheeses: plastic grids offer a smooth and uniform surface that facilitates the turning over of the cheese shapes during the maturing process. This reduces operator fatigue and speeds up processes, allowing you to do this more efficiently and safely;
  • easy operation in the cells or in the seasoning warehouses: thanks to their lightness and ease of handling, stackable grids are perfectly suited to the handling operations inside the cells or the maturing warehouses. This allows to optimize the available space and to facilitate the process of storage and access to the cheese forms;
  • greater hygiene and ease of cleaning: plastic grills are extremely hygienic and easy to wash and sanitize. The smooth, non-porous surface prevents the accumulation of residues and bacteria, ensuring a safer working environment and compliance with food safety standards. This is particularly important in the dairy sector, where hygiene is a top priority to ensure product quality and safety;
  • versatility of use: grids are available with different sizes and characteristics, allowing producers to adapt them to the specific production needs of different types of cheese. This versatility allows to optimize the maturing space and to maximize the production capacity;
  • optimization of space: thanks to their stackable structure, the grids allow to optimize the storage space, reducing the footprint and allowing to make the most of all the available space.

New stackable perforated grid IFT: the ideal solution for cheese seasoning

Stackable cheese plastic grids offered by IFT represent a cutting-edge solution in the dairy sector and are designed to ensure the production of high quality products. They are strictly controlled at every stage of production and made with certified raw materials suitable for contact with food, in full compliance with EC regulations and directives and the national ministerial decree. In addition to the GRPE stackable grid with wide mesh, available in different sizes, IFT has recently expanded its product range with a new perforated stackable grid, which stands out from the standard model for the type of surface. Its technical characteristics make it a versatile and efficient solution for the maturing process of cheeses, offering greater flexibility and convenience in dairy production operations.

The new grid has a perforated surface with round holes with a diameter of 5 mm. This characteristic makes it more adaptable to all types of cheese and to the different stages of drying and maturing. The special perforation also allows optimal ventilation of the cheeses without marking them, eliminating the need to use additional mats during the initial stages, when the cheese is more tender.

The grid dimensions are 760x580x180 mm, ensuring compatibility and stackability with the standard GRPE7658 grids. Made of polypropylene by injection molding in one piece, the new grille is available in standard blue or white colors. Like all IFT food plastic equipment, it is easy to sanitize and can be washed with chlorinated or acidic basic solutions, 1 or 2% (avoiding the use of solutions containing nitric acid, which could compromise the quality of polypropylene in the long term).
